There is absolutely no need to make pastry from scratch for these apple turnovers. With a sheet of good quality puff pastry and a few simple ingredients, you can have a homemade dessert in the oven in no time. Store bought, ready made puff pastry is the easiest shortcut. Giving you more time to enjoy something delicious.

How to make easy apple turnovers

Keep the apple filling simple. I always keep the peel on the apples to help keep their structure when heated. Simply cut the apples in smaller pieces.

Make a simple mixture of melted butter, cinnamon, sugar and a pinch of salt. Cover the apple pieces in the mix to soften them a bit before adding them to the puff pastry. The apples will continue cooking once in the oven. The butter will add a richness to the filling, while the cinnamon a bit of warmth, and sugar and salt to balance the flavours.

Cut the puff pastry into squares and add a spoonful of filling to each square. Do not be tempted to over fill the squares, it is easily done and will always end with the filling finding its way out of the pastry.

On your modestly filled puff pastry square, add another square on top. Seal with a fork on all sides to help the filling stay on the inside.

Make three slices with a sharp knife along the top of the puff pastry squares for the steam to escape. Then give the squares a quick brush with egg wash before you put them in the oven and watch them get golden and crisp.

Substitutes

You can put other fruit inside your pastry. For softer fruits such as berries, use the flesh of the fruit more than the juice to keep the filling inside of the pastry case.
If you have the time and the skill, feel free to substitute the shop bought puff pastry for your own homemade.

Freezable

Store bought puff pastry is one of those ingredients that deserves a permanent place in the freezer. Convenient to take out, let it defrost in the fridge and you have a quick and easy dessert.

The finished apple turnovers can be frozen as well. Defrost in the fridge or on the kitchen counter before reheating them in the oven on a low temperature to crisp up the puff pastry.

Big Batch Cooking Tips

Make the filling ahead of time and keep in the fridge in an airtight container for up to three days. No need to reheat it before adding it to the puff pastry squares when you are ready to bake.
