A collection of comforting soups

When the days are short, the evenings cold and you are reaching for another jumper, there is nothing quite like a bowl of hot, homemade soup. This collection is all about cozy winter soups, hearty comforting soups that are easy to make and perfect for settling in on a chilly day. From creamy vegetables, to hearty beans, to my no waste favourite vegetable soup.

The ultimate comfort food, soup, has a way of making simple ingredients feel incredibly satisfying. Served with warm, crusty bread and you have the perfect cold-weather lunch.

Substitutes

Soup is wonderfully forgiving. You do not need everything to be exact. Use what you have, adjust the seasoning and make it your own.

If you prefer a soup that has a bit more depth, ginger, chili, cumin, turmeric and smoked paprika are all brilliant ways to add depth and heat without making the soup overwhelming spicy.

Freezable

Soups are a perfect dinner to meal prep and freeze in portion sizes containers. Then either take them out of the freezer in the morning and let defrost in the fridge. Or take the soup straight from the freezer and add to a pot on low heat to slowly reheat.

A freezer stocked with soup is one of those small things that makes winter feel considerably easier.

Big batch cooking tips

Make a big pot. Soup is made for batch cooking. Start with one base and add in your vegetables and proteins to make what you want.
