How to make blue cheese stuffed hamburgers

The secret to getting these burgers just right, is how they are assembled. Instead of simply topping the burger with cheese, the blue cheese is tucked inside, creating a melted core of sharp bue cheese.

Start by dividing your ground beef into 50g portions and gently shape each into thin patties. Add a small mound of crumbled blue cheese to half of the patties, then add the other patties on top, press together to seal the edges. Fully enclose the cheese so it melts into a creamy core rather than leaking out during cooking.

Season with salt and black pepper before cooking on a hot pan, until a brown crust on the outside while staying juicy within.

Roast the brioche buns in a dry frying pan and dress your hamburgers with your preferred topping. I like to add even more blue cheese to the dish with a blue cheese dressing. And greenery in form of lettuce, cucumber and a slice of tomato.

Substitutes

I love blue cheese, it is one of my favourites, but you can substitute the blue cheese for any other cheese. Preferably a soft cheese to make sure it goes creamy and gooey as your teeth cut through the hamburger.

If you prefer a more meaty hamburger, skip the diced onion and egg and use only minced meat and blue cheese.

Freezable

These hamburgers are perfect to freeze. You can either freeze them raw, placing a piece of parchment paper in between each patty. Or if you prefer to freeze them ready to eat, cook the hamburgers in the oven and then freeze. Defrost in the fridge before tossing them in a pan for a quick carmelisation of the meat. Addi the patties to a toasted bun with your favourite toppings.

Ingredients

  • 500 g minced meat
  • 180 g blue cheese
  • 1 egg
  • 1 onion
  • 1 tbsp cooking oil
  • Salt and black pepper
  • 5 brioche buns

Optional extra

  • Lettuce
  • Cucumber
  • Blue cheese dressing

Instructions

  • Take out 500 g minced meat and let it come to room temperature.
  • Chop 1 onion.
  • Mix the minced meat with the chopped onion and 1 egg.
  • Slice 180 g blue cheese in five equal pieces.
  • Form ten thin hamburger patties of 50g each.
  • Put one pieces of blue cheese on each hamburger patty and cover with mince meat.
  • Add 1 tbsp cooking oil to a hot pan and cook your hamburger patties for about five minutes on each side, press down with your spatula to make them flatter.
  • If you are unsure if they are cooked all the way through, put the patties in a hot oven for a few minutes.
  • Toast 5 brioche buns in a hot, dry pan.
  • Dress your blue cheese stuffed hamburger with any optional extras you like, such as Lettuce, Cucumber and Blue cheese dressing.
