This creamy green pesto dressing balance bright, herby green pesto with the cool, tang of Greek yogurt, creating a sauce that is as versatile as it is delicious. How to make creamy green pesto dressing

Everything comes together in a single bowl, with a spoon as the only additional equipment you need. Coming together in less than five minutes, using ingredients you might already have at hand. Add green pesto, Greek yogurt and mayonnaise in to a bowl and stir together. Taste and salt as necessary.

Letting it rest for a few minutes before serving allows the flavours to mold and deepen.

Store in an airtight container in the fridge for up to three days. Give it a quick stir before using.

Substitutes

Make the same dressing using red pesto or my personal favourite, roasted aubergine pesto for a different flavour combination.

A squeeze of fresh lemon juice adds acidity to the dressing, while pressed garlic deepens the flavour. Add a pinch of chili flakes or a dash of Sriracha for extra heat.

Freezable

To freeze pesto is one of the best way to preserve an opened bottle or if you have batch made homemade pesto. If you want to use your frozen pesto for this recipe, make sure to take it out of the freezer well in advance and let it defrost fully, before mixing it with the rest of the ingredients. Why not meal prep and freeze your pesto in two-tablespoon portions, easy to defrost the exact amount you need to make a batch of the dressing.

Ingredients

  • 2 tbsp green pesto
  • 5 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • A pinch of salt

Instructions
