Smashed potatoes with pesto
Elevate your smashed potato side dish game with this recipe, adding pesto and cheese for even more flavour.

small potatoes

garlic cloves

Instructions
Wash and brush the potatoes.
Roast potatoes on a sheet pan at
200
°C
(
390
°F
) 20 minutes or until feel soft.
Melt butter in a pan. Turn off the heat and add in the crushed garlic, to slowly cook.
Take out the potatoes and use the bottom of a glass to crush the potatoes.
Brush the potatoes with butter and garlic mix. Sprinkle some salt over each potato.
Put back into the oven for 10 minutes until potatoes are golden.
Take out of the oven and smear each potato with the green pesto. Add the optional shredded cheese and let it melt.
Notes
Serve hot on the buffet table or put them cold into your picnic basket.
