One pot taco bowl with rice

- 500 g minced meat
- Oil to fry
- 1 onion chopped
- 2 tbsp taco seasoning spice mix
- 2 tbsp tomato pure
- 300 ml rice
- 800 ml broth or water and bouillon cube
- 400 g black beans cooked
- 400 g mixed beans cooked
- 2 bell peppers chopped
- 50 ml cream cheese
Taco spice mix
- 1 tsp paprika
- 1 tsp chili
- 2 tsp cumin
- 1 tsp oregano
- 1 tsp salt
- ½ tsp sugar

- Salsa
- Sourcream
- Taco chips
- Lettuce
- Tomatoes
- Cucumber
- Cheese shredded

Chop onion.
Fry minced meat in some oil.
Add the chopped onion to the minced meat and tomato pure.
Add taco spice, add the link here and stir in with the mince meat.
Add rice, water broth and bouillon cube and lower the heat. Cook for 10 minutes.
Drain the beans and add into the rice mixture and let cook through for five minutes.
Chop peppers and hen rice almost cooked, add bell peppers to the mixture.
Once bell peppers has softened add cream cheese and stir through the mixture for acreamy finish.
Serve warm with any optional extras you like.
