Spice up your regular tomato sauce with this spicy, Mexican inspired tomato soup, it will take your regular tomato soup one step further. Add a topping of crunchy nacho chips with partly melted cheddar cheese to bring it all together.
The base of this spicy tomato soup is my Super Simple Tomato soup with the addition of chili to add the spice. But it is the toppings that really makes this soup what it is. Make your own version, by adding the toppings you like.
Freezer Friendly
Can’t finish it all in one evening? Don’t worry, this soup is suitable for freezing and will last many months in the safety of the freezer. Take it out to defrost over night in the fridge or straight from the freezer to the pot on low heat.
Vegan
Want to keep it vegan? Leave out the shredded cheddar cheese and plain yogurt, or use a vegan substitute.
Super Simple Spicy Tomato Soup
Ingredients
- 1 onion
- 2 garlic cloves
- 3 carrots
- 800 g chopped tomatoes
- 500 ml water
- 500 g tomato passata
- 2 tsp chili powder
- 1 tsp salt
- A pinch of pepper
Toppings:
- 2 dl shredded cheddar cheese
- A handful of nacho chips per serving
- Plain yogurt
Instructions
- Chop onion, mince garlic and shred carrots.
- Cook onion and garlic in a large pot until soft, about five minutes.
- Add Carrots and cook together for two-three minutes.
- Add crushed tomatoes and passata.
- Top up with water and spices.
- Bring to boil and then let simmer for fifteen minutes. Taste and add more chili if necessary.
- Ladle the soup in individual bowls.
- Add shredded cheese and a few nacho chips on top.
- Serve with a side of plain yogurt.
