An easy to make pizza dough is always good to have in your repertoire. This recipe do take a bit of time when you include raising the dough. But use this time to prepare your sauce and toppings. I like this recipe because it freezes really well. Make a big batch, portion out the dough and freeze.

This recipe makes four personal size pizzas, but the recipe scales really well and make as many that are needed for your family.

Using oat flour in the pizza dough

I have used a lot of oat flour lately when baking, because I had a whole lot of rolled oats leftover that were about to go bad. Instead of eating oatmeal for breakfast, lunch and dinner, I decided to grind it in my standing blender and make oat flour. Now I use it for everything that requires flour. Usually I use about half and half, I find that this will give the dough enough fibers to be healthy, but still make the dough light and fluffy. Sometimes when you use too much fiber rich flour, the dough can feel thick and loose its bounciness.

If you don’t have oat flour or rolled oats, you can use a whole wheat flour or try other kinds of flour. You might have to adjust the measurement depending on what flour you use.

Freezing

This dough freezes really well. Portion out the dough, put it in freezer bags with a piece of parchment paper in between. I then flatten the bags and freeze them like this to take up as little space as possible.

Toppings

As a base you can try my marinara sauce or my bechamel pizza sauce or use your favourite sauce.

Then add which ever toppings you like, some of my favourites are mushrooms, pesto and sprinkle with roasted pine nuts when coming out of the oven.

Pizza Dough

Ingredients

  • 7 g dry yeast
  • 350 g water
  • 200 g oat flour
  • 400 g white flour
  • 2 tsp salt

Instructions

  • Mix water and dry yeast with a wooden spoon until solved.
  • Add in oat flour, all purpose white flour and salt, keep stirring with wooden spoon until thickens.
  • Use your hands to kneed together until forms a dough. Put on baking table and kneed for another 10 mins. If using a machine this step will of course go much quicker!
  • Let rise under a towel in a warm kitchen for 60 minutes.
  • In the mean time, prepare your sauce and any toppings you want on your pizza.
