One pot taco bowl with rice

Big flavour, minimal effort

Sometimes we just need easy cooking and this one pot creamy taco bowl with rice is just that. Mexican-inspired flavours together in one simple pot, less mess, more taste.

This dish has everything you love in a taco bowl: rice, beans, minced meat, all seasoned to perfection with my home made taco seasoning. Let it cook together for a hearty, satisfying meal with minimal clean up. Ideal for busy weeknights, or for batch cooking for later. Individualise each bowl to every person’s taste with the optional extras or serve as is for a quick home made lunch.

Great food does not have to be complicated to be satisfying.

Substitutes

The recipe calls for beef minced meat, but you can use the minced meat you have at home, try a mix of beef and pork, or make it vegetarian with meat substitutes.

To add more fibres in to the dish, use brown rice instead of white basmati. You might have to increase the liquid to make sure the rice cooks all the way through.

Freezable

This dish freezes very well, store in an airtight container in the freezer for up to three months. Let it defrost over the day and then heat in the oven on low heat for up to ten minutes, make sure it is heated through properly before serving.

Ingredients

  • 500 g minced meat
  • Oil to fry
  • 1 onion chopped
  • 2 tbsp taco seasoning spice mix
  • 2 tbsp tomato pure
  • 300 ml rice
  • 800 ml broth or water and bouillon cube
  • 400 g black beans cooked
  • 400 g mixed beans cooked
  • 2 bell peppers chopped
  • 50 ml cream cheese

Taco spice mix

  • 1 tsp paprika
  • 1 tsp chili
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • ½ tsp sugar

Optional to serve

  • Salsa
  • Sourcream
  • Taco chips
  • Lettuce
  • Tomatoes
  • Cucumber
  • Cheese shredded

Instructions

Taco seasoning

  • Add all the spices in a bowl and mix together. Store in an airtight container or use right away.

Taco bowl

  • Chop onion.
  • Fry minced meat in some oil.
  • Add the chopped onion to the minced meat and tomato pure.
  • Add taco spice, add the link here and stir in with the mince meat.
  • Add rice, water broth and bouillon cube and lower the heat. Cook for 10 minutes.
  • Drain the beans and add into the rice mixture and let cook through for five minutes.
  • Chop peppers and hen rice almost cooked, add bell peppers to the mixture.
  • Once bell peppers has softened add cream cheese and stir through the mixture for acreamy finish.
  • Serve warm with any optional extras you like.
