How to make puff pastry cinnamon squares

To make it easier for yourself, take out the butter early to soften, then cut into smaller pieces. However if you do not have the time for this, you can always soften your butter in the microwave or using hot water.

Turn on the oven to 180C (355 F).

Unroll your puff pastry sheet. Yes, I use store bought. All the time. This is what makes this recipe so quick and easy to make.

Use a butter knife to spread an even layer of butter across your puff pastry sheet, covering the whole sheet.

Mix sugar and cinnamon in a bowl and sprinkle the mixture over the whole sheet.

Cut the pastry into rectangles of roughly 3,5 x 5,5 cm – about 1,5 x 2 inch rectangles. Then put one rectangle on top of the other, with the cinnamon mixture facing each other, to double the goodness in each square.

Use a fork to close the squares by pressing the prongs of the fork into the sides of the square.

Beat an egg and add a bit of water, use a pastry brush to apply the egg wash to all squares.

Put the pastries in the heated oven for 10 minutes, or until golden and flaky.

Freezable

This freezes really well, either before baking or after. For best result, freeze flat. Once frozen solid, you can put them in freezer bags. If baking straight from frozen, leave them in the oven for a bit longer to make sure they are cooked all the way through. Let the colour of the pastries guide you.

Substitutes

This time around I made these with white sugar, but I have also tried to make them with brown sugar, which gives them a more deep caramel taste.
