Yesterday I shared my best adaptable basic tomato sauce. Today I’ll share with you my second go to recipe with this super simple tomato soup. You can use your own homegrown tomatoes for this soup or store bought crushed tomatoes.
Planning ahead
As many families are going back to school in the coming weeks (if you’re not already back!), this soup is perfect to add in to your weekly dinner rotation as it freezes well. Double or triple the recipe if you have room in your freezer and freeze in smaller batches for a quick dinner. For variety add other ingredients during the reheating process. I like to add cumin and chickpeas or any other beans I have in the cupboard for a more filling dish.
If you prefer a smoother soup you can mix it in a blender before serving, be careful though because the soup will be hot.
Super Simple Tomato Soup
Ingredients
- 1 onion chopped
- 2 garlic cloves minced
- 3 carrots shredded
- 800 g crushed tomatoes
- 500 ml water
- 500 g tomato passata
- 1 tsp salt
- A pinch of pepper
Instructions
- Chop onion, mince garlic and shred carrots.
- Cook onion and garlic in a large pot until soft, about five minutes. Add Carrots and cook together for two-three minutes.
- Add crushed tomatoes and passata, top up with water and spices.
- Give it a good stir with a wooden spoon.
- Bring to boil and then let simmer for 15 minutes.
- Taste and add more salt and pepper if necessary.
