Mac and cheese is so much more than just pasta and cheese. It is a dish that can be reinvented again and again. Using different cheese, toppings, and flavour combinations, your imagination sets the limit.

Where to start your mac and cheese journey

Start with the classic recipe, pasta in a delicious cheese sauce. Once you have got this down, then it is time to experiment, add in extra creaminess with cream cheese. Add in a bit of vegetables with a broccoli pure or use your home made taco seasoning to make a different taco night dish.

Substitutions

There are so many recipes for mac and cheese and with all the variations, there are substitutes available if you are missing that one ingredient the recipe calls for.

Freezable

For best result, I freeze the pasta and sauce separately and mix it together when reheating. This gives me the flexibility I want where I can defrost the pasta and sauce I want for the evening.

The exception is my Panko baked mac and cheese which I put together in a freezable and oven safe container (especially if I am making an extra for later), either unbaked or half baked, ready to reheat in the oven when I need it.

Batch cooking tips

When cooking pasta for a different meal, make more, store in the freezer to add to the hot sauce when cooking your next batch of mac and cheese. No need to defrost for hours before adding to the sauce.
