Think a zesty, garlicky hummus, think spicy falafel and you have this delicious chickpea falafelish dressing. Perfect to smother all your salads with this summer. It is quick and easy to put together and it works with so many dishes. A plate of crudités, a roasted chickpea salad, or why not try it as a dip to your homemade falafel.
Try pouring this chickpea falafelish dressing over my zucchini and couscous salad instead of the lemon dressing suggested, for a different flavour combination.

How to make chickpea falafel-ish dressing
This recipe is really quick and easy to put together. Simply add all ingredients to your mixer, whiz for a few minutes and your dressing is ready to be poured on to a delicious salad.
When using a standing mixer, start by adding all the wet ingredients first, that will make it easier to get the dressing mixed and your chickpeas do not get stuck at the bottom.

Substitutes
To avoid having too many different spices in my cupboard that will go stale when not used. I use a pre-mixed falafel spice mix that I buy in my local grocery store. However, you can make your own mix using cumin, coriander, salt, garlic, chili powder, fennel, nutmeg, cloves and cardamom, which are all common ingredients in a falafel spice mix.
The advantage of making your own mix, is that you can adjust the taste to your preference. Store in an airtight container, no longer than the first expiration date on the spices you have used. Dried spices are usually best for no longer than a year in your cupboard, after this the flavour and potency degrades over time.

Freezable
This salad dressing is freezable. Make a big batch, freeze in an airtight container for up to two months. Defrost in the fridge for up to a day. If the dressing seems to thick once defrosted, even after stirring, slowly add more oil until it reaches your desired consistency.
In the fridge, your dressing will last for up to a week, if stored in a clean container, but always check your container for any sign of mold before using.

Chickpea falafel-ish dressing
Ingredients
- 400 g chickpeas canned
- 2 tbsp tahini
- 1 tbsp cumin
- 3 tbsp falafel spice mix
- 2 tbsp lemon
- 2 garlic cloves
- 4 tbsp olive oil
- 4 tbsp vegetable oil
- 1 tsp salt
- 100 ml faba water from the chickpeas
Instructions
- Drain the chickpeas, but save the faba water for later.
- Put all ingredients, except for the faba water, in a standing mixer and pulse until has formed a smooth paste.
- Add in the faba water a little at the time, until the dressing has reached the desired consistency.
- Taste the dressing and adjust to your tastes.
- Serve over a salad or as a dipping sauce to freshly cut carrots and cucumbers.
