Barbecue meatloaf

Imagine a sweet and spicy barbecue, mixed with a comforting meatloaf and you have my barbecue meatloaf using my own homemade barbecue sauce. It is delicious, easy to make and you can batch make it. Make one for tonight and put one in the freezer for later.

Which minced meat to use

I have made this recipe with beef only, a mix and beef and pork (a common mix of meat in Sweden), turkey and vegetarian mince substitute. I tend to shop on what kind of protein is on sale at the time, and use this.

Substitutes

As mentioned above, I have used many different variations of minced meat for this recipe and all works equally well. Depending on the brand of vegetarian mince you use, you might have to use more egg as a binding agent. Or use a smaller oven proof dish, or loaf pan to let the mince mixture rest on, as vegetarian mince sometimes make the mince mixture more crumbly and more difficult to hold its shape.

Replace the dairy milk with whichever milk substitute you use. I myself use oat milk for all my daily needs and cooking.

Freezable

This meatloaf recipe is really good for meal prepping and freezing. You can either freeze it before baking or after. For the fastest meal prep, freeze the loaf after cooking, let it cool down fully before transferring to an airtight container to freeze.

When you need it, take it out of the freezer and leave it in the fridge over the day. Take it out of its freezer container, put it back into an oven safe dish and reheat in the oven for about ten minutes. Make sure it is heated all the way through before serving. If it browns to quickly when you reheat it, add a layer of aluminum foil over the dish to let it get hot without burning the top.

Variations

Using a very similar recipe, you can make barbecue hamburgers using the same barbecue sauce or barbecue meatballs which are equally delicious.

Ingredients

  • 400 g minced meat
  • 1 egg
  • ½ onion
  • 100 ml bread crumbs
  • 50 ml milk
  • 125 ml + 50ml + 25ml barbecue sauce
  • Salt and pepper

Barbecue sauce

  • 2 garlic cloves minced
  • 1 tbs oil
  • 100 ml ketchup
  • 1 ½ tbsp vinegar
  • 2 tbsp brown sugar lightly packed
  • 100 ml room temperature water
  • 1 tbsp soy sauce
  • ½ tsp chili powder

Instructions

Barbecue sauce

  • Mince garlic and fry in a pot for a few minutes in the oil until fragrant.
  • Mixed the rest of the ingredients and add to the pot.
  • Cook for ten minutes on low heat, don’t let it boil. Whisk occasionally.
  • Take off heat and let cool off for a bit before adding it to your dish or serve it as a dipping sauce.

Meatloaf

  • Turn on the oven to 175 °C (350 °F)
  • Dice the onion.
  • Add the breadcrumbs, onion, milk, 125 ml barbecue sauce, salt and pepper into a bowl.
  • Let it rest for 15 minutes until the batter has thicken.
  • Add minced meat and egg to the same bowl.
  • Stir until combined.
  • Let it sit for ten minutes
  • Pour into a glass oven proof dish and shape into a loaf.
  • Cook in oven for thirty minutes.
  • Take out the dish and add 50 ml barbecue sauce on top of your loaf.
  • Put back into the oven for an additional ten minutes.

Notes

To make a smooth barbecue sauce, pour it through a sieve after it has cooked together and cooling down, to catch the small bits of garlic.
Depending on how much you reduce your barbecue sauce, one batch is about 200 ml sauce.
If the meatloaf colours too fast, add aluminum foil over your baking dish to continue the cooking process without burning the top of your meatloaf.
